Cajun Turkey Chili

Super delicious and only 3 WW points per serving
After a few weeks on Weight Watchers I realized that if I didn’t mix up my meals I was going to start slipping back into old habits. One can only eat so much chicken breast and salad with lemon for dinner before they just can’t take it. Enter the delicious Cajun Turkey Chili!
This is a pretty simple meal to prepare. Don't let the number of steps freak you out. This is a actually a pretty easy recipe. What you’re left with is a scrumptious pot of low point chili that you can eat throughout the week. So, turn on some music and let's get cooking!

Gather up:
10 Roma tomatoes
24 ounces of 95% lean turkey
1-2 Sweet bell pepper
Two medium onions
2 tbsp minced garlic
1 cup black beans
½ cup pinto beans
Cajun seasoning
Chili Seasoning
Water to thin out the sauce if needed (I ended up using about a cup and a half of water)
Seasonings to add per your taste:
Ground cumin
Ground cayenne pepper
Paprika
Salt
Pepper
Crushed red pepper
For the sauce base
To start you’re going to want to prep your tomatoes for a sauce. You can easily do this by scoring an x into the tomato on the top. It’s not meant to be deep. Just enough to go through the skin.
Boil the tomatoes for just a few minutes. You will start to see the skin pulling away from the tomato.
Drop the tomatoes into a large bowl of ice water before peeling the skins off.
Cut each tomato into four sections and drop into a blender. Add a little water if needed to get a good blend. Blend to desired consistency (I prefer mine to be smooth).
Some people strain out any seeds. Personally, I don’t mind them but to each their own.
For the Chili
Brown the garlic and onions.
Add your fresh tomato sauce.
Stir and add seasonings. This step is totally up to your personal taste. I add chili powder, cajun seasoning, salt, pepper, paprika, cumin, cayenne pepper, and crushed red peppers. Just keep seasoning and tasting till you get that perfect blend.
Leave on low heat to simmer while you get the turkey ready.
In a separate cast iron pot brown the turkey. Make sure to add your cajun seasoning and salt. I add quite a bit (probably about 6 tbsp) but again, season to your liking.

While the turkey is cooking, add chopped peppers and beans to your sauce base. Add the turkey once fully cooked (also add any water needed if it’s too thick)
Simmer on low for 30-40 mins.

This makes about 8 cups worth and only 3 WW points per one cup serving!
Can’t go wrong with that! You can add a little Mexican Shredded Cheese to the top or pair with cornbread for an even bigger treat!
