Italian Chicken Pita Pockets

A deliciously filling lunch that's equal parts yummy and healthy.


After a few weeks in on my Weight Watchers journey I was craving new recipes. Tired of the same old same old I started experimenting. This is by far my favorite! This recipe makes several pita pockets depending on how much you fill them.


Ingredients:

*3 boneless skinless chicken breasts

*Olive Garden Light Italian Dressing

*Brownberry Healthy Multi-Grain Pita Pockets

*Your choice of greens (I use either romaine or spring mix lettuce)


1) Mix 1 cup of water with 4tbs Olive Garden Light Italian dressing in a crock pot. Add the chicken and cook until easily shredded with a fork. I cooked mine on high for 4 hours, but slow cookers vary greatly.

**You could use any Italian dressing. I am just really partial to this brand.**


2) Shred/rip the chicken. I stored mine in an air tight container to use for different meals.


3) Chop or rip up about a handful of your lettuce as needed. Store any unused.


4) When ready to make your pita pocket mix about a half a cup of the shredded chicken with lettuce and 2 additional tbs of Olive Garden Light Italian Dressing in a bowl.


5) Stuff your Pita pocket with yummy chicken goodness and enjoy!

**I have tried several different pita pockets, and the Brownberry Healthy Multi-grain are by far my favorite. They are lower on WW points, have amazing flavor, and are still very filling. **




I always have issues measuring the points when I make a large amount for multiple meals. Here is the Weight Watchers point break down (Purple Program) for everything.


Marinated chicken (three chicken breasts w/dressing)- 2 pts

1/2 Multi-Grain Pita Pocket-3 pts

Lettuce with additional dressing- 1pt
